Gum arabic readily dissolves in water, forming a clear solution ranging in color from very pale yellow to orange-brown at a pH of about 4.5. GA is used as an emulsifier and thickener in icings, fillings, chewing gum and other confections. GA was more effective in inhibiting non-enzymatic browning and as a color preservative in dehydrated tomatoes.
