Zearalenone is a phenolic resorcyclic acid lactone and can be produced by a number of species of Fusarium known to colonize cereals. Zearalenone (6-[10-hydroxy-6-oxo-trans-1-undecenyl]-b-resorcyclic acid lactone), also known as F-2 toxin, is an estrogenic mycotoxin that is produced by Fusarium graminearum. This fungus can infect cereal grains and can elaborate large quantities of zearalenone.
