Source and Preparation: The synthesis is divided into two steps. The first step is to add 5kg sodium hydroxide into 500kg refined glycerin at 200-300 °C and in the presence of a small amount of alkaline catalysts (such as NaOH, KOH, LiOH, etc.), steam away the water, condense at 260°C for 24h, and then add CO2 gas to stir and remove the generated water. Inert gas is then injected at 220 ~ 225°C and 267kPa to steam off the unreacted glycerol, and finally cooled under nitrogen protection. In the second step, 450kg stearic acid and 485kg glycerin were mixed and stirred, esterified for 2h at 220-230 °C, and then cooled in CO2 airflow to separate a small amount of unreacted glycerin to obtain the product. Carboxylesterase 2 from Human, Recombinant Member of a serine esterase family that hydrolyze ester and amide bonds. Carboxylesterase 2 is an endoplasmic reticulum-bound hydrolase that plays a critical role in xenobiotic detoxification and activation for ester-containing therapeutics. Carboxylesterase 2 is also involved in the detoxification of drugs such as heroin and cocaine. This enzyme is thought to play a role in lipid metabolism. Human carboxylesterase 2 (hCE-2) recognizes a substrate with a large alcohol group and small acyl group. Its substrate specificity may be restricted by a capability of acyl-hCE-2 conjugate formation due to the presence of conformational interference in the active site pocket. Carboxylesterases catalyze the biotransformation of several ester-containing drugs and prodrugs such as angiotensin-converting enzyme inhibitor (temocarpil, cilazapril), anti-tumor drugs (capecitabin) and narcotics. Group: Enzymes. Synonyms: EC 3.1.1.1; Carboxylesterase 2; CES2; CES2A1; CE-2; . Enzyme Commission Number: EC 3.1.1.1. CAS No. 9016-18-6. Purity: >95% (SDS-PAGE). Esterase. Mole weight: ~60 kDa. Cellulase 5C & Acetyl xylan esterase 2A from Clostridium thermocellum, Recombinant Cellulase is any of several enzymes produced chiefly by fungi, bacteria, and protozoans that catalyze cellulolysis, the decomposition of cellulose and of some related polysaccharides; specifically, the hydrolysis of the 1,4-beta-D-glycosidic linkages in cellulose, hemicellulose, lichenin, and cereal beta-D-glucans. Cellulases break down the cellulose molecule into monosaccharides ("simple sugars") such as beta-glucose, or shorter polysaccharides and oligosaccharides. The name is also used for any naturally occurring mixture or complex of various such enzymes, that act serially or synergistically to decompose cellulosic material. Group: Enzymes. DATEM-E472e Diacetyl tartaric acid esters of mono- and diglycerides of fatty acids, or simply DATEM, is an emulsifier used in breadmaking to strengthen the dough structure so that it can successfully expand during proofing and baking. Synonyms: DATEM---E472e;Diacetyl tartaric acid monodiglyceride;Acetylated single (double) glycerol fatty acid ester. CAS No. 977051-29-8. Product ID: CDF4-0258. Category: It is used in bread, buns and many other yeast-leavened bakery products at levels of 0.2-0.6% (based on flour weight). DATEM possesses excellent dough strengthening properties due to its ability to adsorb at the gas/liquid interface of dough and stabilize the foam structure trapped by the gluten matrix and prevent gas bubble coalescence.1,2 So, DATEM enhances gas (CO3) retention and improves tolerance to shocks in case of mechanical abuse during final proofing and baking. Due to its anionic nature, DATEM also has the capacity to interact with gluten proteins, promoting protein aggregation.
